Sweetened Potatoes and Chestnuts with Chives
Ingredients
550g/1¼lb new potatoes
40g/1½oz butter
1 tbsp caster sugar
16 cooked chestnuts, cut into quarters
salt and pepper
1 heaped tbsp
1cm/½in chive sticks
Directions
1. Cook the potatoes in boiling salted water for approximately 20 minutes until tender. Drain in a colander. They can now be peeled before caramelizing if desired.2. Melt the butter in a frying pan and add the caster sugar. Cook on a low heat for 1-2 minutes, then add the cooked potatoes and chestnuts. Continue to cook on a medium heat for 5-6 minutes turning the potatoes and chestnuts from time to time, to ensure an even caramelisation.3. Season with salt and pepper and sprinkle with the chive sticks. The rich golden potatoes and chestnuts are ready to serve.
