Old MacDonald's Potato Box Recipes 

Hash Brown

Ingredients

1 large potato, scrubbed
85g/3oz butter
½ onion, finely chopped
thyme sprig, picked
salt and freshly ground black pepper

Directions

1. Grate the potato coarsely (with the skin on) and squeeze through a tea towel to extract the excess moisture. Season the dry potato with salt and pepper.2. Heat the butter in a medium-sized non-stick pan until foaming. Add the onion and thyme and sauté until tender. Stir in the potato and pack down flat. Place a lid on the pan and cook until the bottom is golden brown. 3. Flip to turn over and continue to cook until brown on the other side. Slide out of pan on to a hot plate and eat at once.
