Gnocchi in Country Sauce

Ingredients

For the gnocchi:
310g/11oz potatoes, peeled and chopped
55g/2oz plain flour
salt and freshly ground black pepper
extra plain flour, for rolling
For the sauce:
1 tbsp olive oil
½ onion, peeled and finely chopped
½ courgette, peeled and cut into 5cm/2in barrel shapes
1 carrot, peeled and cut into 5cm/2in barrel shapes
150ml/¼ pint white wine
2 tbsp tomato purée
1 tbsp snipped fresh chives

Directions

1. Half fill a medium saucepan with water. Season with salt and bring to the boil.2. Boil the potatoes until tender.3. Drain the potatoes, then return them to the pan and mash.4. Beat the flour into the mash.5. Roll the potato out on a floured surface into a 2.5cm/1in wide oblong shape.6. Cut the potato into 2.5cm/1in cubes.7. Heat the oil for the sauce in a small sauté pan.8. Sauté the onion for 1-2 minutes to soften.9. Half fill another medium saucepan with water. Season with salt and bring to the boil.10. Stir the courgette and carrot into the onion and cook for 2-3 minutes.11. Lower the potato cubes into the boiling water and cook until they rise to the surface.12. Add the wine to the vegetables and bring to the boil for 1 minute.13. Lower the sauce heat to a simmer and stir in the purée.14. Remove the gnocchi from the water with a slotted spoon and divide between two serving dishes.15. Pour the sauce over the gnocchi.16. Garnish with chives and serve.
