Potato and Cheese Soup

Ingredients

30g/1oz butter
1 tbsp olive oil
½ red onion
½ potato, peeled and diced
290ml/½ pint chicken stock
110g/4oz cheese, cubed
100ml/3½fl oz cream
handful parsley and chives, chopped

Directions

1. Heat the butter and oil in a large saucepan.2. Add the onions and sauté until soft.3. Add the potatoes and sauté for a further 2 minutes. 4. Pour in the stock. Bring to the boil, then simmer for 8 minutes.5. Stir in the cheese and cream. 6. When the cheese has melted, transfer the soup to a food processor and blitz until smooth.7. Add the fresh herbs and serve, topping with extra cheese, if desired.
