Hash
Ingredients
1 tbsp olive oil
4 spring onions, chopped
2 garlic cloves, peeled and chopped
110g/4oz corned beef, chopped
1 tbsp tomato ketchup
30g/1oz fresh flat leaf parsley
30g/1oz mashed potatoes, preheated
1 egg, fried
Directions
1. Heat the olive oil in a medium frying pan.2. Add the spring onions and sauté for 2 minutes.3. Add the garlic and corned beef and sauté for another 4 minutes.4. Add the tomato ketchup and stir well.5. Toss in the parsley.6. Place a pastry cutter on a flat plate. Spoon in the hash until it nearly reaches the top.7. Add the mashed potato before carefully removing the cutter.8. Top with a fried egg.
