Potato and Onion Soup

Ingredients

1 tbsp olive oil
one third of an onion
2 garlic cloves, chopped
1 potato, roughly chopped
290ml/½ pint vegetable stock
30g/1oz fresh parsley, chopped
salt and freshly ground black pepper

Directions

1. Preheat a medium saucepan.2. Heat the olive oil in the saucepan before adding the onion and garlic and sautéing until soft.3. Add the potato and stir well to cover with oil. Sauté for 2 minutes.4. Pour in the vegetable stock. Bring to the boil then simmer for 8 minutes.5. Transfer the soup to a food processor. Blitz until smooth.6. Return the soup to the saucepan. Season, if necessary. 7. Garnish with the parsley and serve.
