Frittata
Ingredients
½ potato, peeled and chopped
1 tbsp olive oil
¼ onion, chopped
5 mushrooms, chopped
¼ tomato, chopped
6 eggs110ml/4fl oz milk
salt and freshly ground black pepper
Directions
1. Preheat a small saucepan and a medium ovenproof frying pan.2. Preheat the oven to 190C/375F/Gas 5.3. Bring some water to the boil in the small saucepan. Add the potatoes and boil until soft.4. Heat the olive oil in the frying pan, then sauté the onion and mushrooms.5. Add the tomato and sauté until soft.6. Drain the potatoes and add to the frying pan.7. In a medium bowl whisk the eggs with the milk. Season.8. Pour the eggs into the frying pan with the vegetables. Fry for 3 minutes before placing in the oven to finish. Leave in the oven for 5-8 minutes, or until the eggs are cooked.9. Serve hot or cold.
