Potato Soup II

Ingredients

1 tbsp olive oil
2 tsp red onion, chopped
1 red potato, diced
570ml/1 pint vegetable stock
55ml/2fl oz cream
30g/1oz fresh chives, chopped

Directions

1. Preheat a medium saucepan.2. Heat the oil in the saucepan.3. Add the onion and potato and sauté for 4 minutes.4. Pour in the vegetable stock. Bring to the boil, then simmer for 8 minutes.5. Transfer the soup to a food processor. Blitz to purée.6. Return the soup to the pan.7. Add the cream and chives and simmer for a further 2 minutes.8. Ladle the soup into a bowl and serve.
