Potato Bread

Ingredients

85g/3oz potato, peeled
150ml/5fl oz milk
1 egg
50g/2oz corn flour or cornmeal
100g/3½oz rice flour
1 tsp bicarbonate soda
1 tsp cream tartar
1 tsp tartaric acid
pinch salt
1 tsp sugar
1 tbsp olive oil

Directions

1. Preheat the oven to 220C/425F/Gas 7.2. Cook the potato until soft, then drain and liquidize. Add the milk and egg and liquidize again. Mix all the dry ingredients together and fold in the potato purée and the olive oil.3. Line 25cm/10in square, 3cm/1in deep tin with baking parchment and fill with the mixture. Bake for 35 minutes, or until a skewer inserted into the centre comes out clean.Variation:Add 2 crushed garlic cloves or some chopped fresh herbs (such as parsley, tarragon, dill) to the potato.
