Deep-Fried Potato Balls

Ingredients

190ml/½ pint vegetable oil
55g/2oz butter
150ml/¼ pint boiling water
30g/1oz plain flour
1 potato, cooked (boiling)
1 egg
salt and freshly ground black pepper
55g/2oz sesame seeds

Directions

1. Heat the vegetable oil in a large saucepan, and preheat a medium saucepan.2. To prepare the choux pastry, place the butter and boiling water in the saucepan and stir over moderate heat until butter has melted.3. Shake in a little flour (about 1 tbsp) and stir well. Continue to add the flour, stirring as you do so, until a smooth paste forms. Beat the paste and then remove from the heat.4. Scoop out the flesh from the cooked potato and mash the flesh of the potato with the egg.5. Add the mashed potato and egg to the choux pastry and beat until smooth. Season well.6. Form small balls from the above mixture and drop these in the hot oil. Deep-fry for 3 minutes.7. Remove potato balls from hot oil and drain on kitchen towel.8. Place the balls on a plate, top with the sesame seeds and serve.
