Cabernet Truffle Whipped Potatoes

Ingredients

2 large potato, peeled
1 cup cabernet sauvignon
1 cup heavy cream
1 oz shaved truffle
salt, coarse, sea, and, freshly ground black pepper, to taste

Directions

Cabernet Truffle Whipped Potatoes
1.Steam the potatoes until tender.
2.Meanwhile, place the wine and cream in a small saucepan and reduce to 1/2 cup/125 mL.
3.Pass the potatoes through a food mill onto a baking sheet.
4.Dry the potatoes in a 300 or 400°F/150 or 200°C oven for several minutes.
5.Place the potatoes in a heavy saucepan and briskly beat in the cream reduction.
6.Keep the potatoes warm for up to 30 minutes.
7.At the last second stir in the truffles, season with salt and pepper, and serve immediately.
