Old MacDonald's Potato Box Recipes 

Pittsburgh Potatoes

Ingredients

4 cups diced potato
1 small onion
1 teaspoon salt
1/2 jar pimiento strips
1/2 pound process cheese spread loaf
4 tablespoons butter or margarine, melted
3 tablespoons flour
2 cup milk
3/4 teaspoon salt
fine, dry breadcrumbs
butter or margarine, cut up

Directions

Cook first 3 ingredients in boiling water to cover in a saucepan 15 minutes; drain and add pimiento strips. Cook cheese and next 4 ingredients in a saucepan over low heat, stirring constantly, until thoroughly heated and cheese melts. Pour cheese sauce over potato mixture, and spoon into a baking dish. Top with breadcrumbs, and dot with butter. Bake at 350 degrees F. for 20 to 30 minutes.
