Lemon Potatoes

Ingredients

2 pounds baking potatoes, peeled & cubed 1"
1 cup finely chopped onion
3 tablespoons butter or margarine
1 tablespoon grated lemon rind
3 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

Cook potatoes in boiling water to cover for 3 minutes; drain well and set aside.
Sauté chopped onion in melted butter in a large skillet over medium heat until tender. Add lemon rind, lemon juice, salt, and pepper, and stir well. Add potatoes, and stir gently to combine. Spoon potato mixture into a lightly greased 11- x 7- x11 1/2-inch baking dish. Bake, uncovered, at 375° F for 50 minutes or until potatoes are lightly browned.
