Ham 'n Eggs Potato Salad
Ingredients
8 medium potatoes, cooked, peeled and cut in ½ inch cubes
2 tbsp white wine vinegar
11/4 cups mayonnaise
1 tbsp chopped dill
½ tsp dry mustard
pepper to taste
3 cups cooked ham, cut in 1.2 inch pieces
4 hard cooked eggs, chopped
1 medium onion, finely chopped
green pepper rings for garnish
Directions
While potatoes are still warm, sprinkle with vinegar. Blend mayonnaise, dill, mustard, and pepper in a large bowl. Add potatoes, mix well and let stand at room temperature for 15 minutes. Stir in ham, eggs and onion. Refrigerate until serving time. Garnish with green pepper rings.
