Acadian Pea Soup

Ingredients

1 ham bone, with about two cups of meat left on it
11/2 cups dried yellow peas
3 cups diced raw potatoes
1 medium onion, diced
pinch each of thyme, basil, and oregano
salt and pepper to taste
1 tbsp parsley flakes

Directions

Rinse peas. Place ham bone and peas in a 4-quart soup pot. Add enough cold water to cover ham bone ( 6 to 8 cups);bring to a boil. Skim off foam. Add potatoes, onion and seasonings. Simmer 3 hours until peas are tender. Sprinkle with parsley. Remove bone from soup. Cut off meat and chop into small pieces. Return meat to soup.
