Spinach and Potato Casserole
Ingredients
4 to 5 medium potatoes, cooked and mashed
1/3 cup of sour cream
1 tsp of salt
dash pepper
½ tsp granulated sugar
½ cup butter or margarine
¼ to ½ cup milk
2 tsp of chopped chives
1/8 tsp dill seed
1 cup of cooked well-drained spinach
½ cup grated cheddar cheese
Directions
Preheat oven to 400ºF. Combine potatoes, sour cream, salt, pepper, sugar and butter. Add enough milk to make fluffy mixture. Stir in chives, dill seed and chopped spinach. Put in a greased casserole. Sprinkle with cheese. Bake 20 minutes.
