Old MacDonald's Potato Box Recipes 

Island Fish Chowder

Ingredients

6 medium potatoes, cooked, peeled and cubed
½ tsp savory
¼ tsp marjoram
¼ cup vegetable oil
¼ cup vinegar
salt to taste
¼ tsp pepper
½ cup minced onion
1 cup seeded and diced cucumber
½ cup mayonnaise
2 tbsp of prepared mustard

Directions

Combine potatoes and celery. Cover with cold water and set aside. Cover fish with one cup of cold water and heat to simmer for 5 minutes. Strain, reserving liquid. Cut fish in 2 inch pieces. Cut bacon into small pieces and fry in saucepan until crisp. Remove bacon; cook onion slices in bacon fat for 5 minutes. Drain potatoes and celery and add onion slices. Cover with boiling water. Simmer gently until potatoes are tender. Add fish and reserved fish liquid. Cover and simmer for 10 minutes. Add milk, salt, pepper, butter and bacon. To serve, sprinkle with parsley.
