Old MacDonald's Potato Box Recipes 

Clam Casserole

Ingredients

½ cup melted butter
2 tbsp all purpose flour
1 cup evaporated milk
2 small cans (10 oz) baby clams and juice
1 cup finely chopped onion
3 cups diced raw potato
1 tsp salt
¼ tsp pepper
1 tsp celery seed
2 tbsp parsley flakes
4 hard cooked eggs, quartered
1 cup soft bread crumbs

Directions

Melt butter and put in the bottom of a casserole dish. Add flour and mix until blended. Stir in milk and clam juice; mix well to dissolve any lumps. Add clams, onion, potato and seasonings. Mix into sauce. Gently mix in hard-cooked eggs so as not to break them up. Sprinkle with bread crumbs. Bake covered for 20 minutes at 350°F. Remove cover and bake until potato is cooked and casserole is lightly browned on top.
