Almost German Potato Salad
Ingredients
4 med. size cooked potatoes
1/3 c. olive oil
1-2 tbsp. balsamic vinegar
1 tbsp. fresh dill or 1 tsp. dry
1 clove garlic, crushed
1/3 c. mayonnaise
1/3 c. sour cream or plain yogurt
3 stalks celery
3 green onions
4 strips bacon, cook, crumble
Sprigs dill
Directions
Slice or chop cooked potatoes. Mix next four ingredients. Pour over warm potatoes. Chop celery and green onions; add to potato mixture. mix mayonnaise plus sour cream. When potato mix is cool, drain, then add creamy mixture. Garnish top with bacon and dill sprigs, if desired. To make low fat: decrease oil to 1-2 tablespoons; use fat-free mayonnaise and sour cream, omit bacon.
