Potato Soufflé

Ingredients

3 cups hot mashed potato
2 tbsp butter
2 tbsp chopped onion
1tsp salt
2 tsp chopped parsley
shake of cayenne pepper (optional)
3 eggs, separated

Directions

Preheat oven to 350ºF. Combine potato, butter, onion , salt, parsley and cayenne pepper; mix thoroughly. Beat egg whites until stiff. Beat egg yolks and add potato mixture. Gently fold in egg whites. Put in a greased soufflé dish. Set in a pan of water. Bake 1 hour.
