Mashed Potatoes To Die For
Ingredients
6 medium red new potatoes scrubbed and left whole
1/2 head garlic cloves, peeled
2 tbsp olive oil
3 sprigs fresh thyme
1 sprig fresh rosemary
cracked black pepper
2 tbsp butter
1/2 cup sour cream
1 pinch freshly grated nutmeg
1 tbsp fresh parsley
1 tbsp fresh chives
salt, to taste
pepper, to taste
Directions
1.Preheat oven to 375 degrees F.
2.In a large roasting pan toss potatoes and garlic cloves in olive oil.
3.Season with salt and plenty of cracked black pepper.
4.Add thyme and rosemary.
5.Roast for 40 to 45 minutes or until potatoes are golden and tender.
6.Toss occasionally to prevent garlic from burning.
7.Remove from the oven and let the potatoes cool in the pan about 10 minutes.
8.Mash potatoes and garlic while still in the roasting pan with a hand masher.
9.Leave skins on and potatoes chunky. Add butter, sour cream, nutmeg and fresh herbs and stir just to blend
