Warm Potato and Avocado Salad
Ingredients
2 ripe avocados, diced
4-5 small potatoes
2 slices bacon
10-12 cherry tomatoes
1 dash lime juice
1 dash extra virgin olive oil
2 teaspoons capers
1 teaspoon honey
ground black pepper
1/4 cup fresh coriander
salad greens
Directions
1.Cook potatoes until tender and quarter them.
2.Grill bacon then chop into small pieces.
3.Add everything to a pan and cook lightly for three minutes.
4.Toss and serve on salad leaves.
