Pumpkin and Potato Soup
Ingredients
¼ cup butter
1 medium onion finely chopped
2 leeks or green onion chopped
2 medium potatoes peeled and diced
2 cups cooked pumpkin ( canned pumpkin may be used)
2 cups boiling water
2 tbsp of chicken bouillon base
salt and pepper to taste
2 cups of milk or cream
chopped fresh parsley, or chives for garnish
Directions
Sauté onion and leeks in butter until limp, but not brown. Combine with potatoes, pumpkin, water and soup base. Simmer until potatoes are tender. Sieve or put through a blender. Stir in seasonings, milk and cream. Heat slowly. Do not boil. Sprinkle with chives or parsley.
