Cream of Potato Soup
Ingredients
6 medium potatoes, peeled
6 cups water
1 tsp salt
4 slices back bacon
3 medium onions
1 chicken bouillon cube
2 tbsp soft butter
3 tbsp all-purpose flour
2 cups milk
Directions
Combine potatoes, water and salt. Cook until potatoes are tender. Cook and crumble bacon. Stir-fry onion in bacon fat. Add bacon, bouillon cube and butter to soup. Mash well or puréé in a blender. Return to heat. Mix flour and milk and add to soup. Heat through, but do not boil.
