Potato Soup

Ingredients

4 large potatoes
2 quarts water
1 large carrot, peeled and shredded
2 tlbs. snipped parsley
1 medium tomato, chopped
1 tsp. caraway seeds
1/4 tsp. garlic salt
2 tsp. salt
1 bay leaf
1 medium onion, finely chopped
2 tlbs. butter or margarine
2 tlbs. flour
1/2 cup sour cream, optional

Directions

Cut potatoes into strips, then crosswise in 1/4 inch slices. To heated water in a large kettle add potatoes, carrot, parsley, tomato, caraway seeds, garlic salt, salt and bay leaf. Bring to a boil, then simmer for about 30 minutes or until potatoes are tender (do not mash).

Sauté onion in butter until limp. Add flour and cook, stirring until light brown. Add ladle of potato water and cook, stirring until smooth and bubbly. Stir mixture into potato soup, and cook a couple more minutes. If desired, mix some of the soup with sour cream. Blend; add to soup. Remove bay leaf and enjoy!
