Old MacDonald's Potato Box Recipes 

Irish Potato Collops

Ingredients

3 medium potatoes
1 large onion
salt and pepper, to taste
2 teaspoons parsley
1/4 pound (4 ounces) raw bacon, diced
2 tablespoons butter
1 cup scalded milk, still warm
1/4 cup cheddar cheese, finely grated

Directions

Preheat oven to 350 F.

Peel the potatoes and cut into very thin slices. Chop onion.

Place a layer of potatoes on a greased baking dish. Sprinkle with salt, pepper, parsley and diced bacon. Dot with butter. Repeat layers until all ingredients are used.

Pour milk over top and add cheese. Cover and bake for 45 minutes. Uncover and continue cooking until potatoes are done and top is nicely browned.
