Barbecue-Herbed Potato Wedges
Ingredients
2 tbsp of margarine
¼ cup olive oil
¼ cup chopped onion
3 tbsp fresh chopped parsley
1 tsp chili powder
¼ tsp garlic powder
¼ tsp basil
¼ tsp salt
dash pepper
6 medium potatoes
Directions
Melt margarine and combine with olive oil. Butter a large piece of heavy aluminum foil. Combine chopped onion, herbs, and seasonings. Scrub potatoes and cut into ½ inch thick wedges, cutting the potatoes lengthwise. Place potatoes on foil. Brush with margarine and oil mixture. Sprinkle with herbs. Seal the edges of foil. Place on a grill about 4 inches from coals and cook until tender for 30 to 45 minutes.
