Spanish Potato Onion Soup
Ingredients
4 c. thinly sliced onion
2 tbsp. olive oil
4 c. water
4 c. paper thin slices of potato
2 tsp. paprika
1/2 tsp. thyme
1/4 c. dry sherry
1 tsp. salt
1/4 tsp. ground black pepper
Pinch of cayenne
Directions
In a stock pot on medium heat, sauté onions in oil, stirring occasionally.
In a separate pan, bring water to a boil. When onions are translucent, add paprika and thyme. Sauté for a minute.
Pour boiling water onto onions and add potatoes, sherry, salt and pepper. Return to a boil, lower heat and simmer, covered, for about 10 minutes. Cook until potatoes are tender.
