Potato Feta Fritters

Ingredients

1 1/2 cups potato, mashed
120g/4oz feta cheese, crumbled
1 egg beaten
3 spring onions, chopped
3 tablespoons fresh dill, chopped
1 tablespoon lemon juice
rind of half a lemon, finely grated
freshly ground black pepper
flour, for dredging
olive oil
extra dill and lemon, to garnish

Directions

In a medium bowl, add the potato, feta, egg, spring onions, dill, lemon juice, lemon-rind and black pepper. Mix until well combined. Cover and chill for 1-2 hours (until firm).
Using your hands, roll the mixture into golf ball size, flatten slightly.Dredge lightly in flour.
Heat a little oil in a frying pan, and cook a few at a time (until golden brown on both sides). Drain on a paper towel and serve at once.
Garnish with extra dill and lemon.
