Garlic Lemon Potatoes
Ingredients
2-2½ lbs. of Yellow, Red or Purple baby potatoes, cubed
¼ cup fresh lemon juice
¼ cup (60 mL) butter, melted
1 head garlic, peeled, crushed
Directions
Preheat oven to 375°F. Parboil cubed potatoes for 10-15 minutes. Combine potatoes, lemon juice, butter, and crushed garlic in large bowl and toss to coat well. Spread potato mixture evenly in large baking pan. Bake potatoes until tender, about 15-20 minutes. Transfer potatoes to platter and serve.
