Herb Roasted Baby Red Potatoes
Ingredients
2 lbs (1 kg) baby red potatoes, cut into chunks
1/3 cup (85 mL) Dijon mustard
2 Tbsp. (25 mL) olive oil
1 clove garlic, chopped
½ tsp. (2 mL) Italian Seasoning
Directions
Parboil potatoes. Mix all other ingredients in a bowl,
then toss in boiled potatoes. Place on a greased baking sheet
and bake at 425°F for 15-25 minutes.
