Old MacDonald's Potato Box Recipes 

Spanish Potatoes

Ingredients

1 ½ lbs small new (baby) potatoes
5 Tbsp olive oil
2 garlic cloves
½ tsp crushed chilies
½ tsp cumin
2 tsp paprika (we used hungarian for added zip!)
2 Tbsp red or white wine vinegar
1 red bell pepper, seeded and sliced thin
coarse sea salt (optional)

Directions

Cook potatoes in boiling salted water until almost tender.
Drain, and cut larger ones into chunks. Heat the oil in a large frying or saute pan and fry potatoes, turning frequently until golden brown. Meanwhile, crush together the garlic, chilies and cumin using a pestle and mortar. Mix with the paprika and wine vinegar. Add the garlic mixture to the potatoes with the sliced
pepper and cook, stirring for 2 minutes. Serve warm, or let sit
until cold. Scatter with course sea salt, if you like, to serve.
