Indian New Potatoes with Turmeric

Ingredients

1½ pounds unpeeled new potatoes, diced
6 tablespoons *Plugrá Clarified Butter
1 teaspoon whole black mustard seeds
1 teaspoon cumin seeds
1 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
½ teaspoon cayenne
Salt to taste

*Regular butter is 80% butter fat. The remaining 20% is water and milk solids. Plugrá European Style Butter has a little more butter fat (just 2.5% more). The richer butter fat displaces some water and milk solids.

Directions

Heat Plugrá Clarified Butter in a wok or frying pan over a medium heat.
When hot, quickly add black mustard seeds and cumin seeds and then add the potatoes, stirring.
Sprinkle in the turmeric, and cook for about 15 minutes, shaking often, or until the potatoes are lightly browned and almost done.
Just before the potatoes are done, sprinkle in the ground coriander, ground cumin, and cayenne and salt to taste. (Drain off any excess butter in a colander.)
