Potato Mold
Ingredients
1 lb. potatoes
lb. butter
1/4 lb. grated parmigiano
vegetable for garnish (peas, artichokes)
3 eggs
salt
Directions
Boil the potatoes and mash them through a potato ricer or a sieve.
Combine with butter, salt, parmigiano, egg yolks and whipped egg whites.
Pour the potato mixture in a buttered 10 " mola, and cook in bainmarie in a preheated oven for about 20 minutes. Garnish with buttered green peas or artichokes
