Grilled Potato and Onion
Ingredients
2/3 cup olive oil
1 tbsp Dijon mustard
2 tbsp chopped fresh thyme
1 tsp salt
1 tsp black pepper
2 lb. large potato, peeled, and, sliced, 1/4" thick
2 large red onion, sliced 1/2-inch thick
Directions
Directions:
1. Combine mustard, oil, thyme, salt and pepper. Add potatoes and onions to mixture. Spray 4 sheets of foil with vegetable spray. Divide vegetables among sheets. Season with salt and pepper. Fold foil into packets and grill for about 25 minutes.
