Old MacDonald's Potato Box Recipes 

Cheese Potato Scones

Ingredients

½ cup shortening
1 cup hot mashed potato
11/2 cup all-purpose flour
½ tsp salt
4 tsp baking powder
½ cup milk
1 egg, beaten
½ cup grated cheddar cheese

Directions

Preheat oven to 425°F. Melt shortening into hot mashed potato. Sift flour, salt and baking powder over potato mixture. Pour in milk, all at once. Mix just enough to moisten. Turn dough out onto a lightly floured board and knead 15 times. Roll out to ½ inch thickness and cut into triangles. Brush tops with beaten egg. Sprinkle with finely grated cheese. Bake on a lightly greased cookie sheet for 15 to 20 minutes.
