Creamy Chicken Curry Topping
Ingredients
1 cup celery, chopped
1/4 cup onion, chopped
1 Tbsp vegetable oil
1/3 cup flour
1-1/2 cups curry powder
1/2 tsp salt
dash ground pepper
1-1/2 cups chicken broth
1/2 cup lowfat milk
12 oz. cooked, diced chicken or turkey
6 russet potatoes, hot (baked)
Directions
1.Sauté celery and onion in oil until crisp-tender. Add flour curry powder, salt and pepper; cook and stir 1 minute. Slowly add broth until a smooth paste forms. Add milk; cook and stir until thickened and smooth. Add chicken or turkey; heat thoroughly.
2.Cut or pierce tops of potatoes lengthwise, squeeze ends and push toward center. Spoon sauce over potatoes. Makes 6 servings.
Variation: Add 1/2 cup raisins, if desired.
