Autumn Topping

Ingredients

1 cup lowfat yogurt or sour cream
1/2 cup marinated or rehydrated sun-dried tomatoes, drained
1/4 cup chopped kalamata or ripe olives
2 Tbsp. crumbled feta or shredded Parmesan cheese
1/2 tsp. dried Italian herbs, crushed, and salt each
1/4 tsp. ground pepper
4 russet potatoes, baked

Directions

1.Combine all ingredients except potatoes; mix well.
2.Cut or pierce tops of baked potatoes lengthwise; squeeze ends and push toward center to open. Top each with one-fourth of yogurt mixture.
