Potato Cheese Weave
Ingredients
4 (8 oz. each) russett potatoes
4 ounces feta cheese
4 ounces shredded mozzarella cheese
2 tablespoons chopped parsley
1 teaspoon cracked pepper
2 teaspoons olive oil
Paprika
Directions
1.Pare and slice potatoes lengthwise, 1/8-inch thick. Rinse slices and pat dry with paper towels. Place single layer of 4 slices of potato in two rows in oiled 8-inch square microwave-safe dish.
2.Combine cheeses and parsley; toss lightly until mixed. Sprinkle one-fourth of cheese mixture over potatoes; generously sprinkle with pepper. Place single layer of 4 slices of potatoes in two rows, crosswise to first layer, sprinkle one-fourth of cheese mixture over potatoes and sprinkle generously with pepper. Repeat layers. Top with layer of potatoes, brush lightly with olive oil and sprinkle with pepper and paprika.
3.Microwave at HIGH (100%) 12 to 15 minutes or until cheese melts and potato is tender. Let stand 5 minutes. Cut into 4x2 inch pieces.
