Potato Cheese Wafers
Ingredients
1/2 cup butter or margarine, softened
1/4 cup shredded sharp Cheddar cheese
1 egg white
1/4 teaspoon dried thyme, crushed
1/8 teaspoon medium grind pepper
Dash cayenne pepper
1/2 cup flour
1/4 cup potato flour
Poppy seeds or sesame seeds
Directions
1.Mix butter and cheese in mixer bowl. Add egg white, thyme and peppers; mix well.
2.Add flours and mix until blended.
3.Shape into 8-inch log; roll in poppy seeds or sesame seeds. Refrigerate 1 hour or until firm enough to slice.
4.Slice 1/4-inch thick. Place on cookie sheet, 1-inch apart. Bake at 375 degrees about 12 minutes or until lightly browned. Serve warm or cold.
Tip: Dough may be mixed, shaped into logs, rolled in seeds and refrigerated one or two days before baking. Wrap in foil and freeze for longer storage.
