Scalloped Potatoes
Ingredients
3 cups peeled, very thinly sliced potatoes
1 tsp. salt
2 Tbs. flour
3 to 6 Tbs. butter
3 slices bacon, cooked and crumbled
1 1/4 cups milk or cream
1 1/4 tsp. salt
1/4 tsp. paprika
1/4 tsp. dry mustard
Directions
Preheat oven to 350F. Add potatoes and salt to a half-full stockpot of boiling water; parboil about 8 minutes. Drain well. Grease a 10-inch baking dish. Place the potatoes in it in 3 layers, sprinkling each layer with flour and dotting with butter. Sprinkle the bacon on the top layer.
Heat milk or cream, salt, paprika, and dry mustard. Pour over the potatoes. Bake about 35 minutes, testing for tenderness with a fork.
