Twice Baked Potato Casserole

Ingredients

4 medium baking potatoes
1 tablespoon water
1-1/2 cups sour cream
2 tablespoons flour
1 cup (4 ounces) shredded sharp cheddar cheese
1 tablespoon poppy seeds

Directions

Preheat oven to 350° F.

Scrub potatoes and quarter. Place potatoes and water in 2-quart microwave-safe dish. Cover dish with plastic wrap, venting wrap at one corner. Microwave on HIGH 12 minutes (note: microwave times may vary) until potatoes are tender. Remove plastic wrap and drain water.

Combine sour cream, flour, cheese and poppy seeds in medium bowl. Spoon mixture over potatoes. Stir gently to cover completely. Cover. Bake 20 minutes or until bubbly.
