Skewered Kosher Salt Potatoes
Ingredients
12-18 small red potatoes
1/4 cup kosher salt (in shallow bowl)
3 tablespoons olive oil(in shallow bowl)
Seasoning mix
*Fresh basil leaves (if desired)
Directions
Wash potatoes, remove any eyes or spots
Boil small red potatoes in water
(approx. 5 mins)
Do not over cook, just until tender
Drain potatoes, allow to cool until dry or pat dry. Roll potatoes in olive oil to cover, sprinkle w/ seasoning (if desired) roll coated potatoes in salt to cover entire surface (shake off excess salt).
Place on scewers, grill approx. 5 mins. on each side
*If you love basil, place a leaf between each potato before grilling
