Pesto Potatoes
Ingredients
2 lb. small red potato
1/2 cup pesto
salt
freshly ground pepper
2 tbsp chopped chives
Pesto
2 garlic, cloves, chopped
2 cup fresh basil, leaves
1/4 cup pine nuts
1/2 cup olive oil
1/2 cup parmesan cheese
salt, to taste
pepper, to taste
Directions
Potatoes
1.Prepare pesto (see recipe).
2.Scrub potatoes and cut in half.
3.Combine with pesto and salt and pepper.
4.Wrap in one or 2 layers of heavy foil and grill for 10-12 minutes on each side until tender.
Pesto
1.Place garlic, basil, pine nuts and olive oil in food processor. Process until smooth.
2.Stir in Parmesan and salt and pepper.
