Dilly Red Potatoes
Ingredients
1 lb. small red potatoes
1/2 tsp. salt
2 tsp. DILL WEED
Directions
Wash the potatoes. Peel half, leave the half that looks nicest unpeeled. Slice a bit off both ends and discard, then slice each potato into 3-4 pieces. Bring 4 cups water to a boil, add potatoes and salt. Cook 8-10 minutes until fork tender. Drain and cover in the pan for a minute to dry. Toss the potatoes with the drippings from whatever you are cooking - especially if it has cheese, as in the Greek Seasoned fish - baked chicken or pan fried pork chop drippings are great too. If you have no drippings, use 2 tsp. melted butter or 2 tsp. olive oil. Sprinkle with dill weed. If you had no spiced drippings, add salt and pepper to taste. Serve.
