Danish Blue Potatoes

Ingredients

2 lb. Yukon Gold potato, peeled and cut in chunks
6 green onion, cut into short lengths
1/2 cup fresh sage, chopped
1 tbsp finely chopped garlic
1/4 cup chopped sweet red pepper
1 tbsp olive oil
3/4 cup crumbled Danish blue cheese

Directions

1.In a large bowl toss all ingredients together until well combined.
2.On a flat surface, lay out large piece of aluminum foil. Place mixture on foil, spreading it into a single layer. Cover with a second piece of foil, then fold edges together, pressing firmly to seal. Refrigerate until ready to grill.
3.Preheat grill to medium. Place foil packet on grill and cook for 20-30 minutes, turning occasionally, or until potatoes are tender.
