Potato Papillote with Herbs

Ingredients

2 lbs Red Bliss potatoes
2 Red Onions each Cut in thin strips, julienne style
3 tablespoons Melted Duck Fat optional (or, you can use oil in the same quantity) 2 tablespoons Dried Thyme
12 Garlic Cloves each , peeled and chopped
3 tablespoons Salt
1 tablespoon Ground Black Pepper

Directions

Turn the grill on medium. Wash and slice the potatoes 1/2” thick. Place the slices in a large bowl and stir in the rest of the ingredients. Using a piece oaf aluminum, foil about 18” long, spray it with cooking spray or oil and place the potato slices in the middle forming a loaf.

To create the papillote: Fold the aluminum sheet around the potatoes creating a seam on top. Then take another 18” sheet of foil and spray it with the cooking spray/oil. Place the wrapped potatoes, seam down, on the second sheet, and wrap a second time, leaving the second seal on top. This will create an airtight papillote. Cook for 30 minutes on each side.
