Mushroom Dry Rub

Ingredients

1 c. whole dried wild mushrooms, any variety
salt and pepper to taste

Directions

1. Heat the oven to 250 degrees F.

2. Crumble the mushrooms with your fingers over a cookie sheet.

3. Toast the mushrooms for 15 to 30 minutes. This removes any remaining moisture.

4. Allow the mushrooms to cool.

5. Place them in a food processor or spice grinder and grind them as finely as possible.

6. Place the ground mushrooms in a fine mesh strainer and sift over a mixing bowl.

7. Pour the larger pieces left behind in the strainer back into the food processor. Grind them again and sift.

8. Use the sifted mushroom powder as a dry rub. Dust it on food, especially fish, with some salt and pepper before cooking.


Tips:
Many varieties of dried wild mushrooms are now commonly available. All will work for this recipe but will have different tastes. Mixed wild mushrooms are also available.

This dry rub works especially well on fish.

This powder can also be used as a seasoning to boost the flavor of other mushroom dishes, especially soups and gravies.
