Orange Delight
Ingredients
2 oranges
2 medium potatoes, peeled
1 tblspn butter
3 eggs
1 cup caster sugar
200g ground almonds
2 cups icing sugar mixture
2 tspn butter
Orange juice
Directions
Simmer whole oranges in a saucepan of boiling water for 2 hours.
Meanwhile, cook and mash potatoes. Mix through butter. Set aside to cool.
When oranges are cooked, cut into quarters and remove seeds. Place orange quarters into a food processor or blender and process until smooth.
Blend in eggs one at a time, then add sugar. Transfer to a large mixing bowl.
Fold in mashed potato and ground almonds.
Pour into a greased 20cm round cake tin.
Bake for 50 minutes in a preheated 180C oven. Stand 5 minutes.
Turn out onto a wire rack to cool before icing.
Combine icing sugar, butter and enough orange juice to make a thick, smooth consistency. Spread over cake. Keep refrigerated.
Microwave tip: To microwave oranges, cook on HIGH for 20 minutes in a casserole with lid with enough water to cover.
