Gingerbread
Ingredients
21/4 cups plain flour
2 tspn baking powder
1 tspn cinnamon
1 tspn ground ginger
2/3 cup (165g) butter
1/2 cup sugar
2 eggs
1 cup golden syrup
1 medium potato, peeled, cubed
3/4 cup hot water
Directions
Combine flour, baking powder, cinnamon and ginger. Set aside.
Cream butter, sugar and eggs until thick and pale.
Add golden syrup. Set aside.
Microwave potato for 5 minutes.
Mash thoroughly.
Add 3/4 cup very hot water. Mix until no lumps remain.
Gradually blend dry ingredients into golden syrup mixture, alternating with potato and water mixture, beginning and ending with dry ingredients.
Pour into a greased loaf pan.
Bake at 150C for 1 hour or until a toothpick inserted in the centre comes out dry.
Garnish with fruit, whipped cream or ice cream.
